Our Proprietor and Family
John Chamberlain has been a business partner and member of the Waddington community for over 45 years. He and his daughters, Jenna Chamberlain and Jill Chamberlain Winters have helped support and service the Waddington and surrounding communities through many challenging times. They hope you know that they continually strive to support our local community efforts by giving to local events, purchasing from local vendors and hiring local talent. Our amazing Kitchen Team
Joe Erwin
We are excited to announce that we have added Waddington native, Joe Erwin to our team in the kitchen. Joe was born and raised in the restaurant business, with his grandfather (Slim DeFazio) and his mother, the late Linda Erwin at the original Town House in Waddington. He has over 20 years of cooking experience and has elevated our kitchen game and brought a well-rounded skill set to our team.
Chaddy Frederick
Chaddy is our main chef, he has been with us since 2016. He provides over 30 years of restaurant experience. His homemade desserts are featured on our menu and don't hang out long. Chaddys creations include many of our steak, fish and shrimp dishes.
Xavier Johnson
Xavier is our main preparation and fry cook operator. Xavier has now become a local asset that originated from the Syracuse area and because he spent many summers here in Waddington, has helped service our community and JC's by providing consistent culinary experience through past studies and ideas throughout his career.
